Weddings in Malta are popular throughout the entire Summer. Locals and foreigners alike are saying their “I Do’s” on a daily basis and I have been fortunate enough to have been invited to a few.

Normally, at a wedding, I am complimenting the bride on her hair or her dress, or the best man on his speech but at the last wedding I went too all I could talk about was its cocktail bar! Smoking, fizzing, gravity defying, explosive cocktails and each delicious in their own right, this cocktail bar wasn’t just serving drinks. It was putting on a show.

Meet Eddie Bonello, 23, creator of Molecular Fusion, from Attard in Malta. His favourite colour is blue. From the moment he turned 18 he became a bartender. His career saw him quickly learn his trade and moved around various 4 and 5 star hotels on the island. Keen to advance in his career, he took on an internship to work in respected hotels abroad. This fateful decision led Eddie to discover Molecular Gastronomy.

Molecular Gastronomy is a sub-discipline of food science that seeks to investigate the physical and chemical transformations of ingredients that occur in the preparation of food and drink. Typically resulting in stunning, shocking and impressive effects, tastes and sensations.

Inspired to show Malta something it had never seen before, Eddie traveled over seas and took a masterclass course in Molecular Gastronomy to learn more. From that moment on he was hooked, and his thirst for knowledge led him to travel further, taking courses in France, Italy and the UK.

Armed with a wealth of knowledge he entered into the local wedding scene in Malta in 2014. His first ever wedding was recorded and the video produced was very well received locally, sparking lots of interest.

This encouraged Eddie to showcase Molecular Fusion at wedding fairs, where further bookings started to roll in. Word of mouth quickly spread and Eddie started to fill his diary with event after event. Only 12 months on and Molecular Fusion has had interest being expressed in it by foreign agencies around the globe. The Maltese Tourism Authority recently asked Eddie and Molecular Fusion to represent Malta in London.

Eddie has also become a bit of a local celebrity, featuring on various TV shows based around food, entertainment and fashion, as well as features in local and international magazines.

Molecular Fusion has bright future ahead of it. Eddie’s next focus is to set up his own venue locally, expand abroad and set up his own franchise. What is the secret to his success? “I keep it organic, fresh, authentic and unique” says Eddie, with a huge smile on his face.
